Ingredients
- Red peppers3 large
- Ripe tomatoes4 medium
- Garlic3 cloves
- Olive oil3 tbsp
- Ground cumin1 tsp
- Harissa1 tsp (adjustable)
- Salt1 tsp
- Eggs2 (optional)
Instructions

Roast the peppers and tomatoes over a flame or in the oven until the skin blackens. Let cool, then peel and remove seeds.

In a mortar, crush the garlic with salt and cumin. Add harissa and mix to a paste.

Roughly chop the roasted peppers and tomatoes.

In a skillet, heat olive oil, add the garlic paste and sauté for 1 minute. Add the chopped vegetables and cook for 10 minutes over medium heat, stirring.
