Algerian Tajine Zitoune with Chicken and Green Olives

Ingredients

  • Chicken thighs4
  • Onions2
  • Garlic3 cloves
  • Pitted green olives200 g
  • Button mushrooms200 g
  • Preserved lemon1
  • Olive oil3 tbsp
  • Ground cumin1 tsp
  • Paprika1 tsp
  • Turmeric1/2 tsp
  • Salt1 tsp
  • Black pepper1/2 tsp
  • Fresh parsley1 bunch
  • Water500 ml

Instructions

    Heat olive oil in a large pot and brown the chicken thighs on all sides. Set aside.

    In the same pot, sauté the sliced onions and minced garlic until translucent.

    Add the spices (cumin, paprika, turmeric, salt, pepper) and mix. Return the chicken, add water and preserved lemon cut into quarters. Cover and simmer for 25 minutes.

    Add the green olives and sliced mushrooms. Continue cooking for 15 minutes over low heat.

    Sprinkle with fresh chopped parsley and serve hot with bread or semolina.
