Spring Vegetable Tagine with Moroccan Spices

Spring Vegetable Tagine with Moroccan Spices

Here is a vegetarian tagine that captures all the magic of Moroccan spices. The first time I tasted a vegetable tagine, I was amazed by the depth of flavors: cumin, cinnamon, and ginger blend beautifully with the sweetness of carrots and zucchini. For an authentic tagine, the key is to fry the spices in oil to release their aromas, then let everything simmer gently. And if you're wondering which spices are essential in Moroccan cooking, remember the trio of cumin, coriander, and cinnamon, often complemented by ginger and turmeric. This dish is an invitation to travel, simple and comforting. Enjoy!
