- cooked chickpeas400 g
- green olives100 g
- preserved lemon1

- garlic2 cloves
- fresh tomatoes3
- fresh cilantro1 bunch

- ground cumin1 tsp
- sweet paprika1 tsp
- ground ginger1/2 tsp
- saffron threads1 pinch
- salt and pepperto taste

Cut the eggplants into cubes, salt them and let them drain for 15 minutes, then rinse and pat dry.

In a tagine or pot, heat the olive oil and sauté the chopped onion and minced garlic until translucent.

Add the spices (cumin, paprika, ginger, saffron), then the crushed tomatoes and the preserved lemon cut into quarters. Let it simmer for 5 minutes.

Add the eggplants, chickpeas, olives, and water. Cover and cook over low heat for 30 minutes, stirring occasionally.
