
Algerian Chickpea and Winter Vegetable Tagine
This Algerian tagine with chickpeas and winter vegetables is my comfort food, a heartwarming dish that brings back memories. With its gentle spices and melt-in-the-mouth vegetables, it embodies the generosity of Algerian cuisine. You might wonder what spices are typical of Algerian cuisine? Cumin, paprika, and cinnamon are must-haves, adding warm flavors. For an authentic chorba, the same blend is used, but with more tomato and meat. This version is fully vegetarian, perfect for a healthy and delicious dinner.
Ingredients
- cooked chickpeas300 g
- zucchini2
- carrots3
- potatoes2
- onion1
- garlic2 cloves
- fresh tomatoes3
- fresh cilantro1 bunch
- cumin1 tsp
- paprika1 tsp
- cinnamon1/2 tsp
- olive oil3 tbsp
- saltto taste
- pepperto taste
Instructions

Peel and cut the vegetables into large cubes. Chop the onion and garlic.

In a large pot, heat the olive oil and sauté the onion and garlic until translucent.

Add the grated tomatoes, cumin, paprika, cinnamon, salt, and pepper. Simmer for 5 minutes.

Stir in the carrots, potatoes, zucchini, and chickpeas. Add 500 ml of hot water and cover.

Cook over low heat for 30 minutes, until the vegetables are tender. Add the chopped cilantro at the end.

Serve hot, accompanied by traditional Algerian bread or couscous.
