Ingredients

  • flour500 g
  • dry yeast1 packet
  • warm water300 ml
  • salt1 teaspoon
  • grape molasses (or honey)2 tablespoons
  • sesame seeds150 g
  • fig jam200 g

Instructions

    In a large bowl, mix the flour, yeast, and salt. Add warm water gradually and knead until smooth and elastic. Cover and let rise for 1 hour in a warm place.

    Punch down the dough and divide into 4 to 8 balls depending on desired size. Shape into ropes about 2 cm in diameter, then twist into rings.

    In a shallow dish, mix the grape molasses with 2 tablespoons of water. Pour sesame seeds into another dish. Dip each ring in the molasses-water mixture, then roll in sesame seeds.

    Place simits on a baking sheet lined with parchment paper. Preheat oven to 200°C (400°F). Let rest for 15 minutes.

    Bake for 20-25 minutes until golden and crispy. Let cool slightly on a wire rack.
