Preheat the oven to broil and place the whole peppers on a baking sheet. Let them blacken slightly, then cover them with a clean cloth for 10 minutes: this will make peeling easier.

Meanwhile, toast the walnuts in a dry skillet for 2-3 minutes, until they smell nutty. Let them cool.

Peel the peppers, remove the seeds and inner membranes. Place the flesh in a blender.

Add the Greek yogurt, toasted walnuts, minced garlic, olive oil, lemon juice, and salt. Pulse, without making it perfectly smooth: a slightly grainy texture is ideal.

Adjust the seasoning, then pour the sauce into a bowl. Cover and refrigerate for at least 30 minutes to let the flavors develop.
