
Algerian Dried Fava Bean Dip (Loubia Mzoura)

Ingredients
- Dried split fava beans200 g
- Garlic cloves3
- Olive oil3 tbsp
- Ground cumin1 tsp
- Sweet paprika1 tsp
- Salt1/2 tsp
- Black pepper1/4 tsp
- Lemon juice2 tbsp
- Water500 ml
- Fresh parsley chopped2 tbsp

The night before, soak the fava beans in cold water. The next day, drain and rinse them.

In a saucepan, place the beans, cover with water (500 ml) and bring to a boil. Reduce heat, cover, and simmer for 30-35 minutes until very tender.

Meanwhile, crush the garlic cloves with the salt in a mortar to form a paste. Set aside.

Once the beans are cooked, blend them with a little cooking water until smooth. Stir in the garlic paste, cumin, paprika, pepper, and 2 tbsp olive oil.

Transfer to a serving dish, drizzle with lemon juice and remaining olive oil. Sprinkle with chopped parsley.

Serve warm or at room temperature with Algerian bread (kesra) or raw vegetables.
