Ingredients

  • Wheat flour500 g
  • Dry baker's yeast1 packet (7 g)
  • Sugar1 tsp
  • Salt1 tsp
  • Warm water300 ml
  • Olive oil2 tbsp
  • Tuna in oil, drained200 g
  • Tunisian harissa2 tbsp
  • Pitted black olives100 g
  • Capers2 tbsp
  • Hard-boiled eggs2
  • Potatoes2 medium
  • Lemon1
  • Fresh parsley1 bunch
  • Frying oil1 liter

Instructions

    Prepare the dough: mix flour, yeast, sugar, and salt. Add warm water and olive oil, knead until you get a soft dough. Cover and let rise for 1 hour.

    Divide the dough into balls, flatten them into 10 cm diameter disks. Heat frying oil to 180°C and fry the disks until golden on both sides. Drain on paper towels.

    Meanwhile, boil the potatoes in salted water, then peel and roughly mash with a fork.

    Prepare the filling: in a bowl, mix drained tuna, harissa, sliced black olives, capers, chopped parsley, and lemon juice. Add the mashed potatoes and mix.

    Cut the hard-boiled eggs into quarters. Open each fricassé in half (without separating completely) and fill it with the tuna mixture. Add a few egg quarters.

    Serve immediately, with extra harissa if you like it spicy.
