- Algerian bread (matlouh) or pita bread4 pieces
- Potatoes4 medium
- Harissa (Algerian chili paste)4 tablespoons
- Sunflower oil for frying1 liter
- Salt1 teaspoon
- Ground cumin1 teaspoon
- Red onion1 small
- Fresh parsley2 tablespoons chopped

Wash and peel the potatoes, cut them into thick fries. Fry in hot oil until golden and crispy. Season with salt and cumin.

Grill the merguez on a grill pan or barbecue for 8-10 minutes, turning regularly, until cooked and slightly caramelized.

Slice the red onion into thin rings. Chop the parsley.

Warm the bread slightly in the oven or pan. Open them in half without cutting all the way through.

Spread the inside of each bread with a spoonful of harissa. Place 2 merguez per bread, add a handful of fries, some onion rings, and a bit of parsley.
