Ingredients

  • chicken (thighs or breasts)400 g
  • green pitted olives100 g
  • onion1 medium
  • fresh cilantro1 bunch
  • ground cumin1 tsp
  • paprika1 tsp
  • ground ginger1/2 tsp
  • salt1 pinch
  • black pepper1 pinch
  • olive oil2 tbsp
  • Moroccan bread (or pita bread)4 pieces
  • lettucea few leaves
  • tomato1
  • red onion1/2

Instructions

    Cut the chicken into small pieces. Chop the onion and olives. In a bowl, mix the chicken with the spices (cumin, paprika, ginger, salt, pepper) and olive oil. Marinate for 10 minutes.

    Heat a non-stick pan over medium-high heat. Sear the marinated chicken for 5 minutes, stirring.

    Add the chopped onion and olives. Cook for another 5 minutes until the chicken is golden and cooked through. Stir in the chopped cilantro at the end.

    Meanwhile, prepare the vegetables: wash and dry the lettuce, slice the tomato and red onion thinly.

    Slightly open the breads, fill with lettuce, tomato, and onion. Generously add the chicken and olive mixture. Serve hot.
