
Lebanese Stuffed Cabbage and Tahini Sandwich (Malfouf Sandwich)

- Green cabbage leaves8 large leaves
- Long-grain rice150 g
- Ground lamb (or beef)250 g
- Onion1 medium, finely chopped
- Garlic2 cloves, crushed
- Fresh parsley3 tbsp, chopped
- Tomato paste1 tbsp
- Lemon juice2 tbsp
- Tahini (sesame paste)3 tbsp
- Plain yogurt4 tbsp
- Salt1 tsp
- Black pepper½ tsp
- Dried mint1 tsp
- Olive oil2 tbsp

Blanch the cabbage leaves in a large pot of salted boiling water for 2 minutes, then drain and remove the tough central rib. Set aside.

Prepare the filling: in a bowl, mix the raw rice, ground meat, onion, garlic, parsley, tomato paste, mint, 1 tbsp olive oil, salt, and pepper. Knead well.

Place a portion of filling (about 2 tbsp) in the center of each cabbage leaf, fold in the sides, and roll into a small cigar shape. Repeat with all leaves.

In a large skillet or pot, heat the remaining olive oil over medium heat. Arrange the stuffed cabbage rolls seam-side down. Add a glass of water (about 200 ml), cover, and simmer on low heat for 25-30 minutes, until rice is cooked.

Meanwhile, prepare the tahini sauce: whisk tahini with yogurt, lemon juice, a pinch of salt, and 2 tbsp cold water to form a liquid but creamy consistency.
