
Algerian Merguez and Fries Sandwich (Merguez Frites)

Ingredients
- merguez (100% beef/lamb, no pork)8 pieces
- potatoes (for fries)500 g
- traditional Algerian bread (homemade or baguette)4 pieces
- fresh tomatoes2
- harissa (chili paste)2 tbsp
- onions2
- olive oil3 tbsp
- saltto taste
- black pepperto taste
- ground cumin1 tsp

Peel the potatoes, cut them into thick fries, and fry in hot oil until golden. Drain on paper towels and season with salt.

Cook the merguez in a non-stick pan over medium-high heat for about 8 minutes, turning regularly. They should be nicely browned outside and juicy inside.

Meanwhile, thinly slice the onions and cut the tomatoes into rounds. In a small pan, sauté the onions with a little olive oil until translucent.

Open the bread (or cut the baguette into four pieces). Spread the inside with harissa to taste. Add some sautéed onions and tomato slices.

Place two hot merguez in each sandwich, add plenty of fries and a sprinkle of ground cumin on top. Serve immediately.
