Ingredients
- chicken breast300 g
- green mango1
- carrot2
- cucumber1/2
- red onion1 small
- fresh cilantro1 bunch
- fresh mint10 leaves
- unsalted peanuts50 g
- garlic2 cloves
- soy sauce3 tbsp
- lime juice2 tbsp
- honey1 tbsp
- sesame oil1 tbsp
- neutral oil (sunflower)for frying
- salt and pepperto taste

Cut the chicken into thin strips, season with salt and pepper. Heat a little neutral oil in a pan and fry the chicken until crispy and cooked through. Set aside.

Grate the carrot and green mango into julienne strips. Slice the cucumber into thin half-moons and thinly slice the red onion. Coarsely chop the cilantro and mint.

In a small bowl, mix the soy sauce, lime juice, honey, pressed garlic and sesame oil to make the dressing.
