
Fried Rice with Seafood and Lemongrass

Ingredients
- peeled shrimp200g
- cleaned squid cut into rings150g
- cooked and cooled basmati rice300g
- sesame oil3 tablespoons
- minced garlic3 cloves
- fresh lemongrass finely chopped2 stalks
- fresh grated ginger1 teaspoon
- soy sauce3 tablespoons
- eggs2
- sliced snow peas100g
- sliced green onion3
- fresh chopped cilantro2 tablespoons
- salt and pepperto taste

In a wok or large skillet, heat the sesame oil over high heat. Add the garlic, lemongrass, and ginger, and stir-fry for 1 minute until fragrant.

Add the shrimp and squid, stir-fry for 2-3 minutes until cooked. Set aside on a plate.

In the same wok, crack the eggs and scramble quickly with a spatula. Add the snow peas and stir-fry for 2 minutes.

Add the cold cooked rice, mix well to coat with oil. Add the soy sauce, salt, and pepper, and stir constantly for 3-4 minutes over high heat.

Return the seafood to the wok, add the sliced green onion, and gently mix. Heat for an additional 1 minute.

Sprinkle with fresh cilantro, serve immediately in bowls. You can add a squeeze of lime juice for extra freshness.
