
Homemade Palak Paneer with Fresh Spinach and Mild Spices

Ingredients
- Fresh spinach500 g
- Paneer250 g
- Onion1 medium
- Garlic3 cloves
- Fresh ginger1 piece (2 cm)
- Tomato1 medium
- Cumin seeds1 tsp
- Turmeric powder1/2 tsp
- Coriander powder1 tsp
- Garam masala1 tsp
- Vegetable oil2 tbsp
- Salt1 pinch

Blanch the spinach for 2 minutes in boiling salted water, then drain and blend into a coarse puree.

Heat the oil in a pan, add the cumin, chopped onion, garlic, and ginger, and sauté until the onion is golden.

Add the diced tomato, turmeric, coriander, and salt. Cook for 5 minutes until the tomato is soft.

Stir in the spinach puree and simmer for 5 minutes over low heat.

Cut the paneer into cubes, add to the pan with the garam masala, and gently mix. Heat for 5 minutes.
