
Lebanese Noodles with Chicken and Lemon (Riz bi Djej)

Ingredients
- chicken (fillets or thighs)400 g
- rice noodles or vermicelli200 g
- onion1 large
- garlic3 cloves
- lemon juice3 tbsp
- olive oil3 tbsp
- ground cinnamon1/2 tsp
- salt and pepperto taste
- fresh parsley, chopped3 tbsp
- sliced almonds30 g
Instructions

Cut the chicken into pieces. Brown them in a large skillet with 2 tbsp olive oil, then set aside.

In the same skillet, sauté the chopped onion and crushed garlic until translucent. Add cinnamon, salt, and pepper.

Return the chicken, add lemon juice and 200 ml water. Cover and simmer for 10 minutes.

Meanwhile, cook the noodles according to package directions. Drain them.

Stir the cooked noodles into the skillet with the chicken, mix gently, and heat for 2 minutes.

Serve sprinkled with parsley and toasted sliced almonds. Enjoy hot.
