
Algerian Msemen with Butter and Honey
This recipe for Algerian msemen, these flaky and crispy crepes, is a breakfast classic in Algeria. Ingredients

- fine semolina100 g
- warm water300 ml
- salt1 tsp
- vegetable oil2 tbsp
- melted butter100 g
- honey4 tbsp

In a large bowl, mix the flour, fine semolina and salt. Add warm water and oil, then knead until you have a smooth and elastic dough. Cover and let rest for 15 minutes.

Divide the dough into 8 equal balls. On a lightly oiled surface, stretch each ball into a very thin rectangle (almost transparent) using your hands.

Generously brush each rectangle with melted butter, then fold the edges toward the center to form a square. Slightly flatten with the palm of your hand.

Heat a non-stick pan over medium heat. Place a msemen and cook 2-3 minutes on each side, until golden and crispy.

Repeat with the remaining msemens. Serve hot, drizzled with honey or dipped in melted butter and honey.

For a savory version, replace the honey with a filling of onions, peppers and tomatoes.
