
Tunisian Mlakhia with Noodles (Spicy Okra Stew)

Ingredients
- fresh or frozen okra500 g
- olive oil4 tablespoons
- onions2
- garlic4 cloves
- beef (chuck or brisket)300 g
- tomato paste2 tablespoons
- hot chili (harissa)1 teaspoon
- ground cumin1 teaspoon
- paprika1 teaspoon
- salt and black pepperto taste
- water1 liter
- noodles (spaghetti or linguine)400 g
- lemon1
- fresh parsleya few sprigs
Instructions

Wash and trim the ends of the okra. If using frozen, thaw them. Set aside.

In a large pot, heat olive oil over medium heat. Add the chopped onions and minced garlic, sauté for 5 minutes until translucent.

Add the diced beef and brown on all sides (about 8 minutes). Stir in tomato paste, harissa, cumin, and paprika, cook for 2 minutes.

Pour in the water, season with salt and pepper. Bring to a boil, then reduce heat and simmer covered for 45 minutes until meat is tender. Add okra and cook for another 15 minutes.

Meanwhile, cook noodles in salted boiling water according to package directions. Drain.

Serve noodles in bowls, spoon the okra and meat stew on top. Garnish with chopped parsley and a squeeze of lemon. Enjoy hot.
