
Zaatar and cheese Manakish (Lebanese breakfast)
Manakish are a true star of the Lebanese breakfast, often compared to an Eastern pizza. You'll love their simplicity: a fluffy dough topped with zaatar (a blend of thyme, sesame, and sumac) and melted cheese. It's a classic Lebanese mezze dish, but also enjoyed on its own in the morning with a glass of mint tea. To tell Lebanese hummus apart from Israeli hummus, the Lebanese is usually creamier and has more tahini (sesame paste). But here, we focus on these fragrant flatbreads that will fill your kitchen with aroma. An easy and quick recipe to travel to Lebanon without leaving home!
Ingredients
- flour300 g
- dry active yeast1 teaspoon
- warm water150 ml
- olive oil3 tablespoons
- salt1 pinch
- zaatar (thyme, sesame, sumac mix)4 tablespoons
- Akkawi cheese or shredded mozzarella150 g

In a bowl, mix the flour, yeast, salt, and 2 tablespoons of oil. Gradually add warm water, knead for 5 minutes until smooth. Cover and let rise for 1 hour.

Preheat oven to 220°C (430°F). Punch down the dough and divide into 4 balls.

Roll each ball into a circle about 1/2 cm thick on a floured surface.

Mix zaatar with the remaining oil (1 tablespoon) to form a paste. Spread over each dough circle.

Sprinkle cheese on top, leaving a small border.

Bake for 12-15 minutes until edges are golden and cheese melts. Serve warm, plain or with tomatoes and olives.
