
Makroudh with Dates and Honey (Tunisian Pastry)

This treat is very popular during celebrations, but I love it anytime with a good mint tea. To make an authentic Tunisian couscous recipe, the key is the harmony of spices, but here, the crunch of semolina and the sweetness of dates work magic. Ingredients
- fine semolina300 g
- flour100 g
- melted butter100 g
- orange blossom water2 tablespoons
- date paste200 g
- ground cinnamon1 teaspoon
- honey200 g
- frying oil500 ml
- sesame seeds2 tablespoons

Mix fine semolina, flour and melted butter. Add orange blossom water and a little warm water to form a soft, smooth dough. Let rest 30 minutes.

Mash date paste with cinnamon. Form 2 cm diameter logs of filling.

Divide dough into balls, roll each into a rectangle. Place a date log in the center, close well and flatten slightly. Cut into diamonds with a knife.

Heat frying oil to 170°C. Fry makroudh in small batches for 3-4 minutes on each side.

Drain on paper towels, then dip in warm honey for 1 minute. Sprinkle with sesame before serving.
