Lebanese Maamoul with Dates and Walnuts
Maamoul is an iconic pastry from the Levant, often served during religious or family celebrations. Ingredients
- fine semolina500 g
- unsalted butter (or vegan margarine)250 g
- orange blossom water2 tablespoons
- baking powder1 teaspoon
- date paste300 g
- chopped walnuts100 g
- ground cinnamon1 teaspoon
- icing sugar (for dusting)100 g
Instructions

Mix the semolina with the butter at room temperature and let rest in the fridge for 1 hour.

Add the orange blossom water and baking powder, then quickly knead into a smooth dough.

Prepare the filling: mash the date paste with a little hot water if too stiff, then mix in the chopped walnuts and cinnamon.

Shape small balls of dough (20 g), flatten them, place a walnut-sized amount of filling, and close into ovals or press into a maamoul mold.

Arrange on a baking sheet and bake at 180°C for 15–20 minutes (they should remain pale golden).
