Moroccan Kefta Sandwich — Msemen Bread Filled with Spiced Meat and Mint Yogurt Sauce
Here is a sandwich that smells of the alleys of Marrakech and the food stalls of Casablanca: the kefta sandwich, msemen style. The ground meat, fragrant with cumin, paprika, and a hint of cinnamon, is seared in a pan and slipped into soft msemen bread, with a fresh mint yogurt sauce that balances the spices. It's Moroccan street food at its best, easy to make at home in 30 minutes. For essential spices, rely on cumin, paprika, and cinnamon: this trio is the foundation of many Moroccan dishes, like tagine or couscous. Feel free to adjust the harissa to your taste for a little kick.
