Ingredients

  • Fine semolina200 g
  • Melted butter100 g
  • Sugar150 g
  • Orange blossom water2 tablespoons
  • Slivered almonds50 g
  • Chopped pistachios30 g
  • Water250 ml
  • Fresh orange juice100 ml
  • Orange zest1 teaspoon

Instructions

    In a pan, dry-toast the semolina for 2 minutes while stirring, then add the melted butter and mix until golden.

    Add the slivered almonds and pistachios, then pour in the orange blossom water. Mix well and let cool slightly.

    Prepare the syrup: in a saucepan, heat the water, sugar, orange juice, and zest. Boil for 5 minutes until it thickens slightly.

    Pour the hot syrup over the semolina and stir vigorously to obtain a homogeneous paste.

    Transfer the paste to a rectangular mold lined with parchment paper. Smooth the top and let cool completely.
