Pepper and Mozzarella Frittata

Preheat the oven to 180°C. Slice the peppers into strips and the onion into rings.

Heat the olive oil in an ovenproof skillet and sauté the peppers and onion for 5 minutes over medium heat.

Beat the eggs in a bowl, add salt and pepper. Dice the mozzarella.

Pour the beaten eggs over the vegetables in the skillet, distribute the mozzarella and basil leaves.

Cook on the stove for 2 minutes, then bake the skillet for 15 minutes until the frittata is golden and puffed.
