
Lebanese Foul Medames with Fava Beans and Lemon
This Lebanese Foul Medames is a real trip to Beirut at dawn. Imagine creamy fava beans enhanced with garlic, lemon and cumin—it's the favorite breakfast of the Lebanese. Ingredients
- dried peeled fava beans400 g
- garlic3 cloves
- lemon2
- extra virgin olive oil4 tbsp
- ground cumin1 tsp
- salt1 pinch
- fresh parsley1 bunch
- cherry tomatoes150 g
- pita bread4
Instructions

The night before, soak the fava beans in plenty of cold water. On the day, drain and rinse them.

Place the beans in a saucepan, cover with cold water and bring to a boil. Reduce heat and simmer for 10-15 minutes until tender.

Drain the beans and roughly mash them with a fork in a bowl. Add crushed garlic, lemon juice, olive oil, cumin and salt. Mix well.

Wash and halve the cherry tomatoes, chop the parsley. Gently fold them into the bean mixture.

Serve the foul in shallow bowls, accompanied by toasted pita bread. Drizzle with olive oil and sprinkle a little cumin.
