- Ripe tomatoes4
- Cucumber1
- Radishes6
- Red onion1 small
- Fresh mint1 bunch
- Flat-leaf parsley1 bunch
- Sumac2 tablespoons
- Extra virgin olive oil4 tablespoons
- Lemon juice2 tablespoons
- Garlic1 clove
- Salt1 teaspoon
- Pepper1/2 teaspoon

Preheat the oven to 180°C. Cut the pita breads into small squares, brush them with a little olive oil and toast them in the oven until golden and crispy (about 10 minutes).

Wash and dice the tomatoes, slice the cucumber into half-moons, thinly slice the radishes and the red onion. Finely chop the mint and parsley.

In a large bowl, combine the vegetables and herbs.

Prepare the dressing: in a small bowl, mix the olive oil, lemon juice, crushed garlic, sumac, salt and pepper.

Pour the dressing over the salad and toss gently. Add the toasted bread pieces just before serving so they stay crispy.
