Persian Falafel with Saffron and Fresh Herbs (Street Food Sandwich)

Craving a street food sandwich that's a bit different? This Persian falafel with saffron and fresh herbs will transport you straight to the bustling alleys of Tehran. The difference? A dough scented with saffron, mint and coriander, giving a golden color and an intoxicating aroma. The falafels are crispy outside, tender inside, and served in pita bread with a sumac yogurt sauce. Ingredients

  • dried chickpeas250 g
  • onion1
  • garlic3 cloves
  • fresh parsley1 bunch
  • fresh coriander1 bunch
  • fresh mint10 leaves
  • saffron1 pinch
  • ground cumin1 tsp
  • ground coriander1 tsp
  • flour2 tbsp
  • baking powder1/2 tsp
  • salt1 tsp
  • pepper1/2 tsp
  • sunflower oil1 L (for frying)
  • pita bread4
  • tomatoes2
  • cucumber1
  • red onion1
  • greek yogurt150 g
  • lemon1
  • sumac1 tsp

Instructions

    The day before, soak the chickpeas in plenty of cold water.

    Drain the chickpeas and blend with onion, garlic, herbs, saffron, spices, salt and pepper until you get a grainy paste. Add flour and baking powder, mix.

    Shape into walnut-sized balls and flatten slightly. Heat oil to 170°C and fry the falafels for 3-4 minutes until golden. Drain on paper towels.

    Make the sauce: mix yogurt with lemon juice, a little salt and sumac.

    Slice tomatoes, cucumber and red onion thinly.

  6. 6

    Fill each pita bread with falafels, vegetables and yogurt sauce. Serve immediately.
