
Erişte with Chicken and Fresh Mint (Turkish Noodles)

- Turkish noodles (erişte)350 g
- Chicken breasts400 g
- Onion1 large
- Fresh tomatoes3
- Tomato paste1 tablespoon
- Butter50 g
- Olive oil2 tablespoons
- Sweet paprika1 teaspoon
- Mild chili flakes (pul biber)0.5 teaspoon
- Fresh mint1 bunch
- Salt and pepperto taste

Finely chop the onion. Peel and dice the tomatoes. Cut the chicken into strips.

Heat the oil and half of the butter in a large skillet. Brown the chicken strips on all sides. Remove and set aside.

In the same skillet, add the onion and sauté until translucent. Add the tomatoes, tomato paste, paprika, pul biber, salt, and pepper. Let simmer for 5 minutes, stirring.

Return the chicken to the sauce, add a glass of hot water, and cook over low heat for 10 minutes.

Meanwhile, cook the erişte in a large pot of salted boiling water according to package directions (about 8-10 minutes, al dente). Drain.
