
Vegetarian Chakhchoukha with Chickpeas and Spices

Ingredients
- Semolina flatbreads (or stale bread)300 g
- Cooked chickpeas400 g
- Crushed tomatoes400 g

- Garlic3 cloves
- Tomato paste2 tbsp
- Harissa1 tsp
- Ground cumin1 tsp
- Ground coriander1 tsp
- Paprika1 tsp
- Olive oil3 tbsp
- Salt1 tsp
- Pepper1/2 tsp

Crumble the semolina flatbreads into small pieces and lightly moisten with a little water. Set aside.

In a pan, sauté the sliced onions and crushed garlic in olive oil until golden brown.

Add the crushed tomatoes, tomato paste, harissa, cumin, coriander, paprika, salt, and pepper. Simmer for 10 minutes.

Stir in the chickpeas and 1/2 glass of water. Cook over low heat for 15 minutes to blend the flavors.

Add the crumbled flatbread pieces to the hot sauce. Mix gently and let heat for another 5 minutes covered.
