
Homemade Algerian Merguez Skewers
Ah, merguez skewers! A staple of Algerian grilling, especially during holidays and family barbecues. You'll see, making your own merguez at home is not only easy but so much tastier than store-bought. Algerian cuisine is full of popular traditional dishes like couscous, chorba, and tagines, but skewers hold a special place in my heart. What sets Algerian cuisine apart is the generous use of spices like cumin, coriander, and harissa, which give it that unique, sunny flavor. These homemade merguez skewers are perfect for a casual meal: their spicy, juicy meat, lightly scented with fresh mint, will transport you straight to the streets of Algiers. So, fire up the grill!
Ingredients
- Ground beef (lean)500 g
- Ground lamb (with some fat)250 g
- Harissa2 tablespoons
- Ground cumin1 teaspoon
- Ground coriander1 teaspoon
- Paprika1 teaspoon
- Crushed garlic3 cloves
- Grated onion1 small
- Fresh mint, chopped2 tablespoons
- Olive oil2 tablespoons
- Salt and pepperto taste

In a large bowl, mix the ground meats with the grated onion, crushed garlic, harissa, cumin, coriander, paprika, chopped mint, olive oil, salt, and pepper. Knead well until you get a homogeneous mixture.

Cover the bowl and let it rest in the refrigerator for at least 1 hour to allow the flavors to develop.

Divide the mixture into portions and shape into long sausages around wooden skewers previously soaked in water (to prevent burning).

Preheat the grill or a barbecue to medium-high heat. Lightly brush the skewers with olive oil.

Grill the skewers for 8 to 10 minutes, turning regularly, until they are well cooked and lightly browned.
