
Briouates with Cheese and Spinach (Moroccan Pastries)

- fresh spinach300 g
- grated cheese (gouda or mozzarella)150 g

- fresh cilantroa few sprigs
- ground cumin1 tsp
- paprika1/2 tsp
- saltto taste
- black pepperto taste
- melted butter (or olive oil)3 tbsp
Instructions

Sauté the chopped onion and crushed garlic in a little olive oil until golden. Add the washed spinach and let it wilt for 5 minutes, then drain excess water.

Roughly chop the cooked spinach and mix in a bowl with the grated cheese, chopped cilantro, cumin, paprika, salt, and pepper. Let cool.

Cut each brick sheet in half. Place a spoonful of filling in the center of each half, fold the edges to form a triangle or cigar shape, and brush with melted butter.

Arrange the briouates on a baking sheet lined with parchment paper. Bake at 180°C (350°F) for 15–20 minutes, until golden and crispy.

Serve hot or warm, with a green salad or a yogurt-mint sauce. These briouates are perfect as an appetizer or starter for a Moroccan meal.
