
Tunisian Egg Brik

- Brick sheets8
- Eggs4
- Canned tuna200g
- Capers2 tablespoons
- Fresh parsleyA few sprigs
- Salt1 pinch
- Pepper1 pinch
- Frying oil500ml

In a bowl, mash the drained tuna with a fork. Add the chopped capers and chopped parsley. Season with salt and pepper.

Place a brick sheet on a plate. Put a spoonful of tuna mixture in the center.

Make a well in the mixture and carefully crack an egg over it. Season lightly.

Close the brik into a triangle or half-circle shape. Moisten the edges with a little water to seal.

Heat the frying oil to 180°C. Dip the briks one by one and fry for 2-3 minutes on each side until golden brown.

Drain on paper towels and serve immediately, hot and crispy.
