Vietnamese Banh Mi with Grilled Chicken

- soy sauce3 tbsp
- lime juice2 tbsp
- curry paste1 tbsp
- carrot2
- daikon1
- rice vinegar50ml
- sugar30g
- cucumber1
- fresh cilantroa handful
- mayonnaise4 tbsp
- vegetable oil1 tbsp
Instructions

Mix soy sauce, lime juice, and curry paste. Marinate the chicken (sliced thinly) for 20 minutes.

Grate the carrot and daikon. Heat rice vinegar with sugar and 100ml water until dissolved. Pour over the vegetables, let rest.

Grill the chicken in a pan with vegetable oil, 5 minutes each side.

Cut baguettes in half, spread mayonnaise inside. Add grilled chicken, drained pickled vegetables, cucumber slices, and cilantro.
