
Lebanese Arayes with Beef Kefta and Sumac

- Lebanese pita bread4 loaves
- Lean ground beef500 g
- Red onion1 small, grated
- Fresh flat-leaf parsley1 bunch, chopped
- Fresh mint2 tablespoons, chopped
- Sumac1 tablespoon
- Ground cumin1 teaspoon
- Ground cinnamon1/2 teaspoon
- Allspice1/4 teaspoon
- Olive oil3 tablespoons
- Salt1 teaspoon
- Black pepper1/2 teaspoon
- Lemon1, cut into wedges

In a large bowl, mix the ground beef, grated onion, parsley, mint, sumac, cumin, cinnamon, allspice, salt, and pepper. Knead well until you get a homogeneous filling.

Cut each pita bread in half. Carefully open the pocket of each half without tearing it.

Stuff the inside of each pocket with a thin layer of filling (about 1 cm thick), spreading evenly.

Brush the outside of the stuffed breads generously with olive oil using a brush.

Heat a large skillet or grill over medium heat. Cook the arayes for 4-5 minutes on each side, until golden and crispy and the meat is fully cooked.
