
Indian Vada Pav (Spicy Potato Burger)

Ingredients
- Potatoes500 g
- Chickpea flour (besan)150 g
- Sunflower oil1 liter (for frying)
- Mustard seeds1 tsp
- Curry leaves10 leaves
- Garlic4 cloves
- Fresh ginger1 piece (2 cm)
- Green chili2
- Turmeric powder1 tsp
- Cumin powder1 tsp
- Coriander powder1 tsp
- Salt1 tsp
- Lemon juice1 tbsp
- Fresh coriander2 tbsp (chopped)
- Pav (burger buns)4
- Garlic chutney (or tamarind)4 tbsp
- Red onion1 (sliced)
Instructions

Peel and cut the potatoes into pieces. Boil them in salted water until tender. Drain and mash coarsely.

In a pan, heat a little oil and fry the mustard seeds until they pop. Add the curry leaves, garlic, ginger, and chopped green chili. Sauté for 1 minute.

Add the powdered spices (turmeric, cumin, coriander), salt, then the mashed potatoes. Mix well and stir in the lemon juice and fresh coriander. Let cool.

Shape the mixture into 8 balls. Prepare a frying batter by mixing the chickpea flour with about 100 ml of water and a pinch of salt, until smooth and thick.

Heat the oil to 180°C. Dip each ball in the batter and fry until golden and crispy. Drain on paper towels.

Cut the buns in half, spread garlic chutney inside. Place two fried balls per bun, add sliced onions, and serve immediately.
