Ingredients
- Mascarpone500 g
- Fresh eggs4
- Powdered sugar100 g
- Ladyfingers (savoiardi)200 g
- Strong espresso coffee300 ml
- Unsweetened cocoa powder2 tbsp

Brew the espresso coffee and let it cool in a shallow dish.

Separate the egg whites from the yolks. Whisk the yolks with the sugar until you get a foamy, pale mixture.

Gently fold the mascarpone into the yolk-sugar mixture until you get a smooth cream.

Beat the egg whites until stiff peaks form and gently fold them into the mascarpone cream, lifting the mixture.

Quickly dip the ladyfingers in the cold coffee and line the bottom of a dish. Alternate a layer of ladyfingers and a layer of cream, finishing with the cream.

Refrigerate for at least 4 hours. Before serving, generously dust with cocoa powder.
