  • Onions2 medium
  • Olive oil4 tablespoons
  • Garlic3 cloves
  • Green olives (pitted)200 g
  • Preserved lemon1
  • Fresh cilantro1 bunch
  • Ground cumin1 teaspoon
  • Paprika1 teaspoon
  • Saffron (or turmeric)1 pinch

Instructions

    In a large pot, heat olive oil and brown the chicken pieces on all sides. Set aside.

    Add chopped onions and crushed garlic, sauté for 5 minutes until translucent.

    Return the chicken, sprinkle with cumin, paprika, saffron, salt, and pepper. Mix.
