Instructions

    Peel and dice the potatoes. Chop the onion, garlic, and bell pepper. Grate the tomatoes.

    In a large pan, heat the olive oil. Sauté the onion and garlic until translucent. Add the minced meat and cook, breaking it up.

    Add the bell pepper, grated tomatoes, chopped parsley, cinnamon, paprika, cumin, salt, and pepper. Mix and let simmer for 10 minutes.

    Add the potatoes, cover, and cook over low heat for 20 minutes until tender. Preheat the oven to 180°C (350°F).

    Pour the mixture into a lightly oiled baking dish. Crack the eggs on top, spacing them out. Bake for 10–15 minutes, until the eggs are cooked to your liking.
