Pumpkin and Chickpea Tagine with Sweet Spices
This pumpkin and chickpea tagine is a true vegetarian hug, typical of Moroccan meals where vegetables shine. Sweet spices like cinnamon and ginger envelop the tender pumpkin and earthy chickpeas, creating a comforting harmony of flavors. To achieve an authentic tagine, the trick is to simmer slowly over low heat, allowing the spices to gently infuse into the vegetables. Fresh cilantro at the end adds a balancing freshness. Serve it with fresh bread, and you'll be transported to the heart of the medina. Looking for Moroccan spices online? A good halal online market offers raz el hanout for more variations.
