Ingredients

  • Zucchinis4 medium
  • Cooked chickpeas400 g
  • Onion2 large
  • Garlic3 cloves
  • Preserved lemon1
  • Green olives100 g
  • Ground cumin2 tsp
  • Sweet paprika1 tsp
  • Turmeric1 tsp
  • Ground cinnamon1/2 tsp
  • Olive oil3 tbsp
  • Vegetable broth250 ml
  • Fresh parsley1 bunch
  • Salt and pepperto taste

Instructions

    Heat the olive oil in a large pot or tagine. Sauté the sliced onions and minced garlic until translucent, about 5 minutes.

    Add the spices: cumin, paprika, turmeric, cinnamon. Stir and cook for 1 minute to release the aromas.

    Add the zucchini cut into thick slices, drained chickpeas, preserved lemon cut into quarters, and olives. Mix gently.
