
Classic Lebanese Tabbouleh
Lebanese tabbouleh is a light and fragrant salad, iconic of Levantine cuisine. Rich in fresh parsley and mint, with a touch of bulgur and juicy tomatoes, this vegetarian dish is dressed with lemon and olive oil. Perfect as a starter or side for grilled meats.
Ingredients
- Fine bulgur100 g
- Fresh flat-leaf parsley2 bunches (200 g)
- Fresh mint1/2 bunch
- Ripe tomatoes4
- Spring onions2
- Lemon juice3 tbsp
- Extra virgin olive oil4 tbsp
- Salt1/2 tsp
- Black pepper1/4 tsp

Rinse the bulgur, drain, and soak in a bowl of cold water for 15 minutes. Drain again and squeeze out excess water.

Wash and dry the parsley and mint. Finely chop them with a knife (not a blender to keep the texture).

Cut the tomatoes into small cubes after removing the seeds. Finely slice the spring onions (white and green parts).

In a large bowl, combine the bulgur, parsley, mint, tomatoes, and onions.

Add lemon juice, olive oil, salt, and pepper. Mix gently.

Refrigerate for 30 minutes before serving. Serve chilled with lettuce leaves or pita bread.
