Instructions

    Preheat the oven to 200°C. Arrange peppers and tomatoes on a baking sheet, drizzle with a little olive oil, and roast for 20 minutes, until the skin is charred.

    Place the vegetables in a sealed plastic bag for 10 minutes to loosen the skin, then peel and remove seeds.

    In a blender, combine peppers, tomatoes, garlic, chili (if using), cilantro, caraway, cumin, salt, and lemon juice. Blend until smooth but still slightly grainy.

    Heat the remaining olive oil in a pan and pour in the puree. Simmer over low heat for 10 minutes, stirring, until the sauce thickens.
