
Moroccan Tomato Sauce with Ras El Hanout Spices

Ingredients
- Ripe tomatoes4 large
- Onion1 medium
- Garlic3 cloves
- Olive oil3 tbsp
- Ras el hanout1 tsp
- Ground cumin1/2 tsp
- Sweet paprika1/2 tsp
- Cinnamon1 pinch
- Salt1/2 tsp
- Black pepper1/4 tsp
- Fresh cilantro1 bunch
- Lemon juice1 tbsp

Peel and finely chop the onion and garlic. Peel the tomatoes and cut into dice.

In a pan, heat the olive oil over medium heat. Add the onion and garlic, sauté until translucent.

Add the spices (ras el hanout, cumin, paprika, cinnamon, salt, pepper) and stir for 1 minute to release the aromas.

Add the diced tomatoes and simmer over low heat for 15-20 minutes, stirring occasionally, until the sauce thickens.

Remove from heat, add the lemon juice and chopped fresh cilantro. Mix well.
