Egyptian Cheese and Herb Sandwich (Fiteer Meshaltet or Goulash)

You are going to love this crispy Egyptian sandwich, a true explosion of flavors! The fresh cheese mixed with herbs reminds me of the street pastries found in Cairo in the morning. Cumin and coriander bring that oriental touch that makes you travel. It's perfect for a quick lunch, a picnic, or even a gourmet brunch. The dough is light, the filling is melting and aromatic, a real joy! In Egypt, it's often eaten with mint tea. Get ready to make it again and again because it's addictive.

Instructions

  1. 1

Preheat the oven to 180°C (350°F). In a bowl, mash the cheese with a fork, add the chopped herbs, spices, beaten eggs, a pinch of salt and pepper. Mix well.

  2. 2

Roll out the dough on a floured surface. Cut into 4 rectangles if using a large sheet. Spread the cheese and herb mixture over half of each rectangle.

  3. 3

Fold the other half over to form a turnover. Press edges to seal. You can also make rolls (goulash): spread the mixture over the entire dough and roll it into a cylinder.

  4. 4

Place the turnovers or rolls on a baking sheet lined with parchment paper. Brush lightly with olive oil.

  5. 5

Bake for 20-25 minutes until golden and crispy. Serve warm or at room temperature with a green salad and lemon wedges.
