
Algerian Merguez and Fries Sandwich

- Algerian sandwich bread (or traditional bread)4
- Potatoes4 large
- Frying oilenough
- Harissa sauce (homemade preferred)4 tablespoons
- Onion1 small
- Tomatoes2

- Ground cumin1 teaspoon
- Extra spicy merguez (optional)to taste

Peel the potatoes, cut into thick fries, and fry in hot oil until golden. Drain on paper towels and salt.

Grill the merguez in a pan or on the barbecue for 5-7 minutes, until cooked through and lightly charred.

Slice the breads in half and lightly toast in the oven or pan.

Make the sauce by mixing harissa with a bit of water and a pinch of cumin. Slice the onion and tomato into rounds.

Assemble each sandwich: spread harissa sauce on both bread halves, place 2 merguez, a handful of fries, some tomato and onion slices. Close and serve hot.
