Ingredients

  • carrots500 g
  • orange1
  • lemon1
  • olive oil3 tablespoons
  • ground cumin1 teaspoon
  • sweet paprika1/2 teaspoon
  • fresh cilantro1 bunch
  • saltto taste
  • black pepperto taste
  • pitted green olives100 g

Instructions

    Peel the carrots and grate them finely using a grater or food processor.

    Peel the orange, remove the segments and cut them into small dice. Squeeze the juice from the remaining half lemon.

    In a bowl, mix the grated carrots with the olive oil, cumin, paprika, salt, and pepper.

    Add the orange dice, lemon juice, and green olives cut into rounds. Mix gently.

    Chop the fresh cilantro and add it. Refrigerate for at least 30 minutes to allow the flavors to blend.
