
Lebanese Spinach and Pine Nut Rice (Riz bi Sabanekh)

Ingredients
- Long grain rice250 g
- Fresh spinach200 g
- Onion1 large
- Pine nuts40 g
- Olive oil3 tbsp
- Salt1 tsp
- Black pepper1/2 tsp
- Ground cinnamon1/2 tsp
- Vegetable broth (water)500 ml
Instructions

Rinse the rice under cold water until the water runs clear. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add finely chopped onion and cook until translucent.

Add washed and roughly chopped spinach. Cook for 2-3 minutes until wilted, then season with salt, pepper, and cinnamon. Mix well.

Add the rice and pine nuts to the skillet. Stir for 1 minute to coat the rice.

Pour in the hot broth (or water), bring to a boil, then cover and simmer on low heat for 15 minutes, until liquid is fully absorbed.

Remove from heat, let rest covered for 5 minutes, then fluff the rice with a fork. Serve hot, alone or as a side dish.
