
Indian Pav Bhaji (Spiced Vegetable Sandwich)
Ah, Pav Bhaji! For me, it's a true trip to Mumbai in every bite. Imagine a creamy vegetable mash, perfumed with pav bhaji masala, one of those Indian spice blends that awaken all the senses. This street sandwich is simple happiness: tender vegetables, gently spiced, served in a little butter-toasted bun. You love comfort food? Then give in. Each bite is an explosion of flavors, from the softness of the potatoes to the crunch of fresh onions and that masala dancing on your palate. It's easy to make at home and a refreshing change from classic sandwiches.
Ingredients

- carrots2
- cauliflower1/2 head
- peas100 g
- onion1 large
- tomatoes2 ripe
- green bell pepper1
- fresh ginger2 cm
- garlic cloves4
- green chili1 (optional)
- pav bhaji masala2 tbsp
- turmeric powder1 tsp
- cumin powder1 tsp
- ghee (clarified butter)3 tbsp
- burger buns (pav)8
- saltto taste
- fresh cilantroa few sprigs
- lemon juice1 tbsp

Cook the potatoes whole until tender. Drain, mash coarsely, and set aside.

In a large pan, heat 2 tbsp of ghee. Add chopped onion, grated ginger and garlic, minced green chili (if using). Sauté for 3 minutes.

Add diced carrots, cauliflower florets, peas, diced bell pepper. Sauté for 5 minutes. Add grated tomatoes, turmeric, cumin, pav bhaji masala, and salt. Stir and add a little water (about 100 ml). Cover and simmer for 10 minutes until vegetables are tender.

Add the mashed potatoes to the pan. Mix well, mash the vegetables coarsely with the back of a spoon. Adjust seasoning, add lemon juice and chopped cilantro. Simmer for another 5 minutes, the bhaji should be thick.

Heat the remaining ghee in another pan. Cut the buns in half and lightly toast on both sides.

Serve the bhaji hot on a plate with the toasted buns on the side. Spread the bhaji generously on the bun and enjoy with sliced onions and lemon wedges.
