
Tunisian Ossban with Sweet Spices and Fresh Herbs

Ingredients
- Garlic head1
- Fresh mint leaves1/2 bunch
- Fresh cilantro1/2 bunch
- Fresh spinach500 g
- Olive oil4 tablespoons
- Turmeric1 teaspoon
- Ground cumin2 teaspoons
- Harissa (optional)1 teaspoon
- Eggs6
- Grated cheese (gruyère or gouda)200 g
- Lemon juice1
- Salt and pepperTo taste

Finely chop the garlic, mint, and cilantro. Wash the spinach and roughly chop it.

Heat the olive oil in a pan, add the garlic and herbs, then the spinach with turmeric, cumin, and harissa. Cook for 5 minutes over low heat.

Beat the eggs in a bowl, add the grated cheese, the cooled spinach mixture, lemon juice, salt, and pepper. Mix well.

Pour the mixture into a greased loaf pan (with a little oil) and bake at 180°C (350°F) for 20-25 minutes, until golden and set.

Let it cool slightly, then unmold and cut into thick slices. Serve hot or warm with a green salad and whole grain bread.

For a spicier version, add fresh chopped chilies or serve with a spoonful of harissa on the side.
